Finca Los Cañales – El Salvador
Our roasters at Origin were first introduced to the coffee Finca Los Cañales at the Cuzcachapa mill earlier this year. It was put on the cupping table by Ricardo Lima’s brother Fernando who owns Finca Santa Elena, a farm they have been working with for
years. Ricardo is a long-time member of the Cuzcachapa mill where he dry mills his coffee after processing it at his family’s wet mill, El Congo.
Both El Congo and Los Cañales have a strong dedication to environmental sustainability. They use recycled rain water for all processing and consider themselves fortunate to still be 100% organic in a time where the roya fungus has destroyed a lot of great organic farms.
This year’s crop is particularly special as most of Los Cañales was replanted a few years ago and the trees are now achieving the delicious sweet cup quality we love in El Salvadorian coffee.
How does it taste?
As to be expected with a naturally processed bean, this coffee is bursting with fruit! Sugar-coated red berried, nectarine and a juicy nectar-lie body complement the sweet bright notes.
