Here’s what our roasters at Origin have to say about the farm and the story behind this bean:
‘Tutianapa, an old Mayan name meaning “between two rivers” is located in the renowned coffee growing region of Santa Ana. This coffee is farmed by our long-standing trade partner, Fernando Lima, who is a highly respected figure in El Salvadorian coffee and has run Cup of Excellence for the past ten years. The Lima family has been growing coffee for generations and so is fortunate enough to have a number of farms across Santa Ana, which include Tutianapa and Santa Elena (which forms part of our new Resolute Espresso blend). In each of his farms Fernando has established a rigorous growing policy including a focus on organic production – due to the high elevation and isolation of his farms he has been fortunate to have been spared the worst of the Roya fungus.
We last visited Fernando in March where we tried his new naturally processed coffee from Tutianapa; this coffee has been produced as an experiment in flavour development following discussions during our previous sourcing visit. We were delighted with the result!’
This naturally processed bean has a heavy syrupy body with big black cherry and chocolate sauce notes, with a long blackberry jam finish. Acidity is light with a slight citric quality.
